Warm orzo salad with mint and feta

Ingredients:

  • 230g orzo
  • 2 cups frozen early peas
  • 1/4 cup olive oil and vinegar dressing
  • 1 tablespoon lemon juice
  • 1/4 cup freshly chopped mint leaves

Instructions:

  1. Cook orzo in a large pot of boiling salted water according to package instructions until it reaches al dente texture. Once cooked, turn off the heat and toss frozen peas into the hot water. Allow it to sit for 1 minute.
