Warm mushroom salad
Indulge your taste buds with a delectable warm mushroom salad. The earthy flavors of sautéed mushrooms combined with fresh greens create a culinary delight.
Ingredients:
- 1/2 cup STAR Extra Virgin Olive Oil
- 1 1/2 lbs. mushrooms, wiped clean with a damp towel and sliced
- 1/4 cup chopped shallots
- 1/4 cup STAR Balsamic Vinegar
- 3 Tbs. each chopped fresh basil and Italian parsley
- Salt and pepper
- 1/4 cup toasted pine nuts
Instructions:
- Heat olive oil in a large skillet over high heat. Cook mushrooms and shallots until mushrooms start to brown, which should take approximately 6 minutes. Pour in vinegar and stir to scrape up browned bits. Take the skillet off the heat. In a big bowl, mix the rest of the oil and vinegar. Put in parsley and basil and mix well. Add salt and pepper according to your taste. Serve the dish warm with a sprinkle of pine nuts.
