Warm lentil salad with roasted vegetables and apples

Ingredients:
- 2 cups cooked lentil
- 2 apples
- 1 sweet potato
- 1 beetroot
- 1/2 cup almonds
- 2 tablespoons hemp seeds
- 2-3 handfuls arugula
- 2+1 tablespoons olive oil
- 1 lime or lemon, juice
- 1/2 orange, juice
- 1 tablespoon mustard
- 1 clove of garlic
- salt
- pepper
- smoked paprika
Instructions:
- Heat up the oven to 200°C. Cut the sweet potato and beetroot into small pieces, place them on a baking sheet, season with salt, pepper, and paprika, then sprinkle with a little olive oil. Roast for approximately 40 minutes.
- Prepare your lentils by cooking them, or if using canned lentils, heat them in a saucepan.
- To make the sauce, combine lime juice, orange juice, olive oil, mustard, maple syrup, minced garlic, salt, and pepper.
- Combine the lentils, toasted almonds, thinly sliced apples, and roasted vegetables in a large bowl. Toss everything together with the sauce. Serve over arugula, topped with seeds and nuts.
