Warm lentil salad with roasted vegetables and apples

Ingredients:

  • 2 cups cooked lentil
  • 2 apples
  • 1 sweet potato
  • 1 beetroot
  • 1/2 cup almonds
  • 2 tablespoons hemp seeds
  • 2-3 handfuls arugula
  • 2+1 tablespoons olive oil
  • 1 lime or lemon, juice
  • 1/2 orange, juice
  • 1 tablespoon mustard
  • 1 clove of garlic
  • salt
  • pepper
  • smoked paprika

Instructions:

  1. Heat up the oven to 200°C. Cut the sweet potato and beetroot into small pieces, place them on a baking sheet, season with salt, pepper, and paprika, then sprinkle with a little olive oil. Roast for approximately 40 minutes.
  2. Prepare your lentils by cooking them, or if using canned lentils, heat them in a saucepan.
  3. To make the sauce, combine lime juice, orange juice, olive oil, mustard, maple syrup, minced garlic, salt, and pepper.
  4. Combine the lentils, toasted almonds, thinly sliced apples, and roasted vegetables in a large bowl. Toss everything together with the sauce. Serve over arugula, topped with seeds and nuts.
