Warm lentil salad

Indulge in the delectable flavors of a warm lentil salad, bursting with colorful vegetables and tantalizing spices. Perfect for a nutritious and satisfying meal.

Ingredients:

  • 1 cup red lentils, picked over and washed
  • 2 1/2 cups chicken broth
  • 1/4 cup each finely diced radish, red, yellow and green bell pepper
  • 1/3 cup mustard vinaigrette
  • Salt and freshly ground black pepper
  • 1/4 cup chopped flat leaf parsley

Instructions:

  1. Heat up the broth until it starts boiling. Put in the lentils and allow them to come to a boil once more. Reduce the heat and let it simmer without a lid until the lentils change color, for about 6 to 7 minutes.
  2. If there is too much water, pour it out. Put the lentils in a bowl and mix in the chopped radish, as well as bell peppers of various colors. Once the mixture has cooled down to room temperature but is still slightly warm, add vinaigrette dressing and season with salt and pepper to your liking.
  3. Just before you're ready to serve, mix in the parsley and use it as a base for the chili scallops.
