Ingredients:

  • 150 grams Cherry Tomatoes
  • 1 teaspoon Chopped Fresh Parsley
  • 1 Shallot
  • 1/2 Lemon
  • 2 tablespoons Sherry Vinegar
  • 1 Small Chilli
  • 1 pinch Salt
  • 1 pinch Sugar
  • 250 grams Halloumi
  • 70 grams Asparagus
  • 1 Cooked Beetroot
  • 1 Avocado
  • 1/2 Lettuce Head

Instructions:

  1. To begin, let's start by creating the dressing in advance to allow enough time for marination. Finely chop cherry tomatoes, chili pepper, shallot, and parsley. Combine all the finely chopped ingredients in a medium-sized bowl, add sherry vinegar, salt, and pepper. Mix thoroughly and set aside to infuse while you prepare the salad.
  2. Cut the halloumi into slices and cook them on a grill for a few minutes on each side.
  3. Meanwhile, in a small saucepan, bring water to a boil and briefly poach the asparagus. Be cautious not to overcook it, as nobody enjoys mushy asparagus.
  4. Peel and cut the avocado into slices, then drizzle some lemon juice over it to prevent discoloration.
  5. Tear lettuce into pieces and neatly arrange all the components on a plate.
  6. Drizzle the prepared dressing over the salad and serve promptly while it is still warm.
