Warm chicken parmesan salad
Delicious warm chicken parmesan salad bursting with flavors of tender chicken, savory parmesan, fresh greens, and zesty dressing. Perfect for a satisfying meal!
Ingredients:
- 2 tablespoons extra-virgin olive oil
- 6 chicken cutlets, about 90g each
- 3/4 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 1 1/2 cups store-bought marinara sauce
- 3/4 cup shredded mozzarella
- 3 cups baby arugula
- 1 cup small basil leaves
- 1/2 cup shaved Parmesan
- 1/4 cup chopped oil-packed sun-dried tomatoes
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon Champagne vinegar
- 1/4 teaspoon salt
Instructions:
- Heat olive oil in a large skillet on medium-high heat. Season both sides of the cutlets with salt and pepper flakes. Place the cutlets in the skillet and cook without moving them until they turn golden brown on one side, around 3 minutes. Flip the cutlets and cook for an additional minute. Pour marinara sauce over the cutlets and turn them around to cover them in sauce. Sprinkle mozzarella on top, then lower the heat to medium, and cover the skillet. Let it cook for another 5 minutes until the cheese melts.
- While the chicken is cooking, mix arugula, basil, Parmesan, sun-dried tomatoes, olive oil, vinegar, and salt in a large bowl. Toss the ingredients together until everything is well coated.
- To serve: Put a piece of chicken on a plate and spoon some sauce over it. Add a portion of the salad directly on top of the chicken, and then it is ready to be served.
