Warm chicken & ciabatta salad
Indulge in the delicious blend of tender chicken and crispy ciabatta, expertly combined with vibrant greens and zesty dressing in this warm salad.
Ingredients:
- 500g skinless boneless chicken thigh fillets, cut into chunks
- 3 tbsp olive oil
- ½ ciabatta loaf, torn into chunks
- 2 large garlic cloves, finely chopped
- 140g pickled red cabbage, plus 4 tbsp of the pickling juices
- 1 red onion, sliced
- 100g bag baby leaf & herb salad
- 110g pack pomegranate seeds
Instructions:
- Preheat the oven to 200C/180C fan/gas 6. Coat the chicken pieces with 1 tbsp of oil, season with salt and pepper, and place them on a baking tray. Bake in the oven for 10 minutes. Mix the torn ciabatta bread with minced garlic, a little more salt and pepper, and the remaining oil. Combine this with the chicken and bake for another 10 minutes.
- Combine the shredded red cabbage and sliced red onion. Once the chicken is done, let it cool for a few minutes, then mix it with the cabbage mixture. Stir well, then dress with the pickling liquid from the cabbage, and the salad greens. Top with the pomegranate seeds.
