Warm chicken & ciabatta salad

Indulge in the delicious blend of tender chicken and crispy ciabatta, expertly combined with vibrant greens and zesty dressing in this warm salad.

Ingredients:

  • 500g skinless boneless chicken thigh fillets, cut into chunks
  • 3 tbsp olive oil
  • ½ ciabatta loaf, torn into chunks
  • 2 large garlic cloves, finely chopped
  • 140g pickled red cabbage, plus 4 tbsp of the pickling juices
  • 1 red onion, sliced
  • 100g bag baby leaf & herb salad
  • 110g pack pomegranate seeds

Instructions:

  1. Preheat the oven to 200C/180C fan/gas 6. Coat the chicken pieces with 1 tbsp of oil, season with salt and pepper, and place them on a baking tray. Bake in the oven for 10 minutes. Mix the torn ciabatta bread with minced garlic, a little more salt and pepper, and the remaining oil. Combine this with the chicken and bake for another 10 minutes.
  2. Combine the shredded red cabbage and sliced red onion. Once the chicken is done, let it cool for a few minutes, then mix it with the cabbage mixture. Stir well, then dress with the pickling liquid from the cabbage, and the salad greens. Top with the pomegranate seeds.
