Warm brussels sprout salad

Ingredients:
- 1 tablespoon olive oil
- 60g thinly sliced pancetta, chopped
- 450g Brussels sprouts, trimmed and thinly shaved
- Kosher salt and freshly ground black pepper
- 2 teaspoons red wine vinegar
Instructions:
- Warm the olive oil in a spacious pan over medium heat. Put the pancetta in and cook while stirring occasionally until it becomes crispy, which takes around 6 minutes. Then, take it out with a slotted spoon and place it on a plate lined with a paper towel to let it drain.
- Boost the heat to medium high, then introduce the Brussels sprouts, 1/2 teaspoon salt, and some pepper into the pan. Stir frequently and continue cooking until the sprouts turn bright green and begin to wilt slightly, approximately 2 to 3 minutes. Take the pan off the heat and pour in the vinegar; mix thoroughly to ensure the sprouts are coated. Put everything into a bowl and sprinkle the crispy pancetta on top.
