Warm barley and caramelized mushroom salad
Delight in the savory flavors of warm barley paired with tender caramelized mushrooms in this wholesome and satisfying salad.
Ingredients:
- 2 cups pearled barley (5 cups cooked)
- 1/2 cup plus 2 tablespoons extra-virgin olive oil
- 910g mixed mushrooms, stemmed and cut into bite-size pieces
- 2 teaspoons chopped sage
- 1/4 cup fresh lemon juice
- Kosher salt
- Pepper
Instructions:
- Boil the barley in a medium saucepan with water until it is soft, which should take around 30 minutes. Remove the water and place the barley in a big bowl.
- Heat up 2 tablespoons of olive oil in a spacious frying pan. Put one-third of the mushrooms in and cook them on high heat while stirring until they turn golden brown, which usually takes about 5 minutes. Move them to the big bowl. Repeat this process two more times using 4 tablespoons of oil each time and the rest of the mushrooms. Mix in the sage, lemon juice, the remaining 1/4 cup of oil, salt, and pepper in the bowl and toss everything together.
