Warm bacon potato salad

Delicious warm bacon potato salad, blended with creamy dressing, crispy bacon, and tangy mustard. A perfect side dish for any meal.

Ingredients:

  • 910g red potatoes quartered
  • 2 tablespoons olive oil
  • 230g bacon cut into 1" pieces
  • 1 clove garlic minced
  • 1/2 red onion chopped
  • 1/4 cup red wine vinegar
  • 1 tablespoon grainy mustard
  • salt and pepper
  • 1 stalk green onion chopped

Instructions:

  1. Preheat your oven to 375F. Take a baking sheet and mix the potatoes with the olive oil. Bake for about 25 minutes or until a knife easily goes through a potato.Warm up a skillet over medium heat. Put in the bacon and cook for 2 minutes. Then mix in the garlic and the red onion. Cook for another 3 minutes until the bacon becomes crispy.In a big bowl, blend together the red wine vinegar, mustard, salt, and pepper. Add the bacon, garlic, and onions with all the bacon drippings. Combine with the roasted potatoes and the green onions. Mix gently and serve right away.
