Walnut pesto pasta salad
Delight in a refreshing blend of tender pasta, aromatic walnut pesto, and vibrant mixed greens. Experience a symphony of flavors in every bite.
Ingredients:
- 450g whole-wheat penne or rotini pasta
- 2 cups lightly packed fresh basil leaves, plus more for garnish
- ½ cup lightly packed flat-leaf parsley leaves
- ½ cup chopped walnuts, toasted
- ½ cup grated Parmesan cheese
- 1 clove garlic, grated
- 1 tablespoon lemon juice
- 1 teaspoon salt
- ¼ tablespoon ground pepper
- ½ cup extra-virgin olive oil
- 1 medium tomato, chopped
- ½ cup chopped jarred roasted red peppers, rinsed
Instructions:
- Start by heating a large pot of water until it boils. Follow the instructions on the pasta package for cooking. After that, empty the pot, run cold water over the pasta, and drain it.
- While waiting for the pasta, mix basil, parsley, walnuts, Parmesan, garlic, lemon juice, salt, and pepper in a food processor. Blend the mixture, making sure to push down the ingredients from the sides. Gradually pour in the oil while the processor is running.
- Move the pesto into a big bowl, then combine it with the pasta, tomato, and peppers. Stir everything together well. Add extra basil on top if preferred.
