Walnut-crusted chicken breasts

Ingredients:

  • 2 slices whole wheat bread, stale
  • 1/3 cup walnuts
  • 2 tablespoons Parmesan cheese, freshly grated
  • 1 large egg white
  • Salt and freshly ground black pepper
  • 4 chicken breasts, boneless and skinless (6 to 230g each)
  • 1 tablespoon grapeseed oil
  • 2 lemon slices, for serving
  • Green salad, for serving

Instructions:

  1. Preheat your oven to 425° F. Using a food processor, mix together bread, walnuts, and Parmesan cheese; add salt and pepper for seasoning. Continue to process until you achieve fine breadcrumbs, then transfer the mixture into a shallow bowl.
  2. In a separate shallow bowl, whisk the egg white until it becomes frothy. Season the chicken with salt and pepper. Dip each chicken breast into the egg white, allowing any excess to drip off, before coating it in the breadcrumb mixture by pressing it down to make it stick.
  3. Heat oil in a large nonstick ovenproof skillet over medium heat. Add the chicken and cook until it turns a light brown color, which should take around 1 to 3 minutes. Carefully flip the chicken over and transfer the skillet to the preheated oven. Bake the chicken until it is cooked through and nicely golden on the outside, usually about 8 to 12 minutes.
  4. Present the chicken alongside lemon slices and a side of green salad.
