Waldorf salad with chicken & rutabaga
Delight in the perfect blend of flavors with this Waldorf salad featuring succulent chicken and earthy rutabaga. A harmonious symphony of taste awaits!
Ingredients:
- 1 large rutabaga, peeled (see Tip) and cut into 1/2-inch cubes
- ½ cup water
- ⅓ cup creamed honey (see Tip)
- ⅓ cup cider vinegar
- ¼ cup low-fat plain yogurt
- ¼ cup light mayonnaise
- 2 teaspoons Dijon mustard
- ½ teaspoon kosher salt
- ½ teaspoon ground pepper
- ⅛ teaspoon ground cinnamon
- 340g diced cooked chicken breast
- 1 large crisp apple, cut into bite-size chunks
- 1 cup thinly sliced celery
- 1 cup red grapes, halved if large
- ½ cup Marcona almonds, preferably rosemary-roasted
- 7 cups chopped romaine lettuce
Instructions:
- Put rutabaga in a big microwave-safe bowl, pour water and cover it tightly. Heat in the microwave on High until it becomes soft, for around 10 minutes. Remove the cover, watching out for the steam; pour out the water and allow it to cool down, approximately 15 minutes.
- While waiting, mix together honey, vinegar, yogurt, mayonnaise, mustard, salt, pepper, and cinnamon in a large bowl until the mixture is smooth.
- Combine the rutabaga, chicken, apple, celery, grapes, and almonds with the dressing; mix everything together until coated. Present it over lettuce.
