Waldorf-salad-stuffed endives
Try this delectable Waldorf Salad Stuffed Endives for a burst of flavors like crisp apples, juicy grapes, crunchy walnuts, and creamy dressing.
Ingredients:
- 1/2 cup sugar
- 1 tablespoon water
- 1/2 cup chopped walnuts
- 2 endives
- 1 cup anjou pear, cut in matchstick-size strips
- 110g gorgonzola cheese, crumbled
- 2 tablespoon reduced balsamic glaze
Instructions:
- To prepare the walnuts: In a non-stick skillet over high heat, combine sugar and water and stir continuously. Once the sugar syrup starts to caramelize, add in the chopped walnuts and toss until they are well-coated. Take the skillet off the heat and transfer the walnuts onto a cookie sheet lined with a silpat or wax paper. Allow them to cool completely before roughly chopping them.For the salad: Gently separate the endive leaves and select the largest ones for stuffing. Fill each leaf with pear slices, gorgonzola cheese, and the prepared caramelized walnuts. Arrange 2 to 3 filled leaves on a small plate and drizzle with balsamic glaze. Repeat this process until all ingredients have been used. Serve the salad immediately.
