Waldorf salad chicory bites

Discover the perfect blend of crisp chicory and tantalizing flavors in this Waldorf Salad chicory bites. A culinary delight for your taste buds!

Ingredients:

  • 2 heads of chicory (we used red)
  • 1 green apple, cored and finely chopped
  • 1 celery stick, finely chopped
  • small handful of walnuts, roughly chopped
  • 6 red grapes, finely chopped
  • 2 tbsp natural yogurt
  • ½ lemon, juiced
  • 1 tsp Dijon mustard
  • 50g crumbly blue cheese or vegetarian alternative

Instructions:

  1. Remove the base from every chicory head and separate the leaves (aim for 16-20 leaves). Arrange the leaves on a big serving dish (refer to the suggestion below).
  2. Mix together the diced apple, celery, walnuts, grapes, yogurt, lemon juice, and mustard in a bowl, and add seasoning. Fill each chicory leaf close to the base with a small amount of the mixture, keeping the leafy end free. Sprinkle the crumbled blue cheese on top and present.
