Waldorf salad chicory bites

Ingredients:
- 2 heads of chicory (we used red)
- 1 green apple, cored and finely chopped
- 1 celery stick, finely chopped
- small handful of walnuts, roughly chopped
- 6 red grapes, finely chopped
- 2 tbsp natural yogurt
- ½ lemon, juiced
- 1 tsp Dijon mustard
- 50g crumbly blue cheese or vegetarian alternative
Instructions:
- Remove the base from every chicory head and separate the leaves (aim for 16-20 leaves). Arrange the leaves on a big serving dish (refer to the suggestion below).
- Mix together the diced apple, celery, walnuts, grapes, yogurt, lemon juice, and mustard in a bowl, and add seasoning. Fill each chicory leaf close to the base with a small amount of the mixture, keeping the leafy end free. Sprinkle the crumbled blue cheese on top and present.
