Wagon wheel pasta salad

Ingredients:

  • 170g wagon wheel pasta
  • 1 heaping cup very small broccoli florets
  • 1/2 cup corn kernels, fresh or frozen
  • 1 small garlic clove, minced
  • 1 tablespoon red wine vinegar
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt and freshly ground black pepper
  • 60g reduced-fat cheddar cheese, shredded
  • 60g thick-sliced ham, cut into small cubes
  • 1 scant cup cherry tomatoes, halved
  • 1 tablespoon chopped parsley (optional)
  • 2 scallions, sliced (optional)

Instructions:

  1. Start by heating a medium pot of water until it boils. Cook the pasta following the instructions on the package. When the pasta is almost ready, throw in the broccoli florets and corn kernels. Let it cook for half a minute and then pour everything into a colander. Rinse the pasta with cold water to halt the cooking process. Leave the pasta in the colander to drain while you prepare the dressing.
  2. Combine the minced garlic, red wine vinegar, olive oil, 1/2 teaspoon of salt, and a couple of twists of black pepper.
  3. Mix the drained pasta, broccoli, corn, ham, cheese, tomatoes, parsley, and scallions (if preferred) in a large bowl. Toss the ingredients together. Store the salad in an airtight container in the fridge for up to 5 days.
