Vietnamese-inspired peach salad

Ingredients:
- 1 cup plus 1 Tbsp. canola oil, divided
- 1 large shallot (about 5 oz.), thinly sliced
- ¼ cup fresh lime juice (from 3 limes)
- 1 tablespoon light brown sugar
- 2 tablespoons fish sauce
- 1 clove garlic, grated (1 tsp.)
- ½ red Fresno chile, thinly sliced (about 1 Tbsp.), optional
- 3 donut peaches
- 1 7-oz. head butter lettuce, separated into leaves (about 6 cups)
- 1 cup fresh mint leaves
- ¼ cup chopped roasted, salted peanuts
Instructions:
- Heat 1 cup of oil in a small saucepan over medium heat. Cook the shallot until it turns golden brown, stirring occasionally, for approximately 15 minutes. Remove the shallot using a slotted spoon and place it on a plate lined with a towel.
- In the meantime, mix lime juice, sugar, fish sauce, garlic, 1 tablespoon of oil, and chile (if preferred) in a small bowl. Whisk the mixture until the sugar dissolves.
- Cut peaches into thin rounds by slicing starting from the bottom and going around the pit to remove it. Arrange the slices on a plate and pour 3 tablespoons of the lime juice mixture on top. Allow it to sit for 5 minutes.
- On a serving platter, layer lettuce leaves, peach slices, and mint. Sprinkle fried shallots and peanuts on top. Drizzle the remaining lime juice mixture over the dish. Serve immediately.
