Vegetable vinaigrette pasta salad

Ingredients:

  • 1/2 cup diced raw carrot
  • 1/2 cup sliced raw zucchini
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon white balsamic vinegar  
  • 1 teaspoon sea salt
  • 1/2 cup grapeseed oil
  • 450g cooked pasta of choice
  • 1/4 cup grated Parmesan

Instructions:

  1. Start by making the vinaigrette. Combine carrots, zucchini, Dijon mustard, apple cider vinegar, balsamic vinegar, and salt in a food processor. Blend until the mixture is smooth. Gradually pour in the oil to create an emulsion. Transfer the vinaigrette to a bowl. Then, mix the pasta with half of the vinaigrette in a separate bowl. Toss the pasta to coat it evenly, adding more vinaigrette to taste. Once the pasta is well-coated, transfer it to a serving dish, sprinkle with Parmesan cheese, and serve.
