Ingredients:
- 1/2 cup gouda cheese
- 1/2 cup colby cheese
- 1/2 cup sharp cheddar cheese
- 1/2 cup mild cheddar
- 1/2 cup Swiss
- 1/2 cup cream cheese
- Ingredients from 1 recipe Summer Green Pea Salad, recipe follows
- 4 cups shelled fresh young green peas
- 3 tablespoons garlic-flavored olive oil
- 2 tablespoons balsamic vinegar
- 1/2 cup diced red bell pepper
- 1/2 cup diced yellow bell pepper
- 1/4 cup chopped red onion
- 2 tablespoons chopped scallions
- 3 tablespoons chopped fresh basil leaves
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions:
- Cut the cheese into cubes and keep it to the side. Take a souffle dish and create a base layer with the Green Pea Salad. Next, add a layer of cheese, making sure to include a variety of cheeses each time. Continue alternating between layers of cheese and pea salad until all ingredients are used. Place the dish in an oven preheated to 190 °Cand bake for 25 minutes.
- To prepare the green pea salad:
- Start by boiling a large saucepan of salted water. Add the peas and let them simmer for 2 to 3 minutes or until they are just tender. Drain the peas and put them in a big bowl. Mix in the oil and vinegar, ensuring the peas are evenly coated. Allow them to cool down to room temperature. When you're ready to serve the salad, gently combine the bell peppers, red onion, scallions, basil, salt, and pepper with the peas. Serve immediately.
