Vegan thai cucumber salad

  • 1 small red jalapeño pepper or other fresh chile pepper, finely chopped
  • 1 scallions, halved and sliced
  • 2 English cucumbers, halved, seeded and thinly sliced
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped unsalted dry-roasted peanuts

Instructions:

  1. Combine lime juice, oil, tamari (or soy sauce), brown sugar, jalapeño (or chile), and scallions in a large bowl. Mix in cucumbers, cilantro, and peanuts until everything is coated. Allow it to sit for approximately 30 minutes, giving it a stir from time to time, to allow the cucumbers to marinate.
