Vegan thai cucumber salad

- 1 scallions, halved and sliced
- 2 English cucumbers, halved, seeded and thinly sliced
- ¼ cup chopped fresh cilantro
- ¼ cup chopped unsalted dry-roasted peanuts
Instructions:
- Combine lime juice, oil, tamari (or soy sauce), brown sugar, jalapeño (or chile), and scallions in a large bowl. Mix in cucumbers, cilantro, and peanuts until everything is coated. Allow it to sit for approximately 30 minutes, giving it a stir from time to time, to allow the cucumbers to marinate.
