Vegan kebabs

Ingredients:

  • 100g tempeh
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tbsp dried oregano
  • 2 tbsp vegan mayonnaise
  • ½ small garlic clove, crushed
  • 2 flatbreads
  • 4 tbsp pickled red cabbage, drained
  • 150g salad leaves

Instructions:

  1. Cut the tempeh into slices that are 1⁄2cm thick. Combine 1 tbsp of olive oil with paprika, oregano, a pinch of salt, a sprinkle of black pepper, and 1 tbsp of water in a bowl. Add the tempeh and mix it well to evenly coat. If possible, refrigerate it overnight; otherwise, set it aside at room temperature as you move on to the next steps.
  2. Whisk together the mayonnaise with 1⁄2 tbsp of water and crushed garlic in a small bowl. Warm the flatbreads in a pan over medium heat for about 30 seconds on each side. Spread the garlic mayonnaise on both flatbreads and then add the pickled cabbage and half of the salad leaves on top.
  3. In a large frying pan, heat the remaining 1 tbsp of oil over high heat. Cook the marinated tempeh for 2-3 minutes on each side over medium heat until they become crispy and golden brown. Place the cooked tempeh on the flatbreads, fold them over, and serve with the remaining salad on the side.
