Vegan bbq sandwich

Ingredients:
- 2 sweet potatoes (about 1 lb each)
- 1 1/2 cups vegan bbq sauce or 1 1/4 cups bbq sauce plus 1/4 cup sriracha
- 4 slices toast
- 2 cups slaw salad mix
- 2 tablespoons vegan mayo
- 1/2 tablespoon vinegar
- 1/2 teaspoon mustard powder
- 1/2 teaspoon celery seed
- 1 teaspoon brown sugar
- salt and pepper to taste
Instructions:
- Heat up the oven to 200 °C. Cut the sweet potatoes into slices that are approximately 1/6 to 1/8 inch thick.
- If you opt for a sriracha-bbq blend, mix it now.
- Arrange the potato slices on two cookie sheets lined with parchment paper. Spread the bbq sauce on one side, then turn the slices over and spread the sauce on the other side. Sprinkle a bit of salt over the top.
- Cook in the oven for 30 to 35 minutes.
- While the slices are baking, mix together coleslaw, mayonnaise, vinegar, dry mustard, celery seeds, brown sugar, salt, and pepper.
- For serving, stack the sweet potato slices on toast and add the coleslaw on top. Add another slice of toast on the top. Serve immediately.
