Upbeet lentil salad

Try this vibrant Upbeet Lentil Salad for a burst of color and flavor. Packed with nutritious ingredients, it's a delightful addition to any meal.

Ingredients:

  • 1 packet Love Beets, chopped
  • 2 oranges
  • 1 cup blueberries, rinsed
  • 1 cup beluga lentils
  • 1 cup Cucumber, diced
  • 1 scallion, sliced
  • 2 cups fresh basil, mint, dill
  • 1 cup sunflower sprouts
  • 1 packet Treeline Vegan Cheese, crumbled
  • 1/2 cup Champagne Vinegar
  • 2 tablespoons Dijon Mustard

Instructions:

  1. Follow the cooking directions for the lentils as per the packaging. Allow them to cool.
  2. Make the dressing by grating the peel and extracting the juice from one orange. Mix these with vinegar and Dijon mustard.
  3. Remove the peel and dice the rest of the orange. Mix it with sprouts, beets, blueberries, cucumber, herbs, scallions, and lentils in a big salad bowl.
  4. Drizzle the dressing over the salad and mix well.
  5. Sprinkle vegan cheese on the top and decorate with extra herbs. Delight in!
