Ultimate christmas burger
Indulge in the savory delight of our Ultimate Christmas Burger that combines the festive flavors of the season for a taste sensation like no other.
Ingredients:
- 20g unsalted butter
- 1 banana shallot, finely chopped
- 500g 12% fat beef mince
- 40g fresh breadcrumbs
- 1 egg yolk
- 2 tsp English mustard
- ½ tsp cracked black pepper
- 8 thin slices of smoked pancetta
- 2 tbsp vegetable oil
- 4 brioche burger buns
- 4 tbsp cranberry sauce
- chicory or salad leaves, to serve
- 80g crumbled blue cheese (stilton works well)
- 1 tbsp mayonnaise
- 2 tbsp soured cream
Instructions:
- Begin by melting the butter in a frying pan on medium heat until it starts to foam. Proceed to cook the shallots with a pinch of salt for about 10 minutes, or until they become soft and see-through. Allow them to cool off.
- Transfer the beef mince into a spacious bowl, then mix in the now-cooled shallots, breadcrumbs, egg yolk, mustard, pepper, and 1 tsp of salt. Combine the ingredients thoroughly by hand. Shape the mixture into four burger patties of equal size, weighing them for precision if desired. Store the patties in the refrigerator, where they can be kept for up to 48 hours.
- Preheat the grill to a medium setting. Place the pancetta on a baking tray and grill for 3-4 minutes until it becomes crispy.
- In a separate bowl, prepare the blue cheese sauce by blending the cheese, mayo, and soured cream together. Season the mixture to your liking and set it aside.
- Take the pancetta out of the grill and preheat the oven to 220C/200C fan/gas 7. Heat oil in a large frying pan over medium heat and cook the burgers for 3 minutes on each side until they turn golden brown. Move the burgers to a baking tray and bake for another 10-12 minutes in the oven until they are fully cooked. Cover the burgers and let them sit for 5 minutes.
- Toast the inside of the buns in a dry frying pan. Spread cranberry sauce on the bottom halves, place a patty on each, top with blue cheese sauce, salad leaves, and pancetta, and finish by adding the top halves of the buns.
