Two-pea pesto chicken salad
Delight in a flavorful mix of tender chicken, vibrant peas, and zesty pesto in this unforgettable salad bursting with freshness and savory notes.
Ingredients:
- 1 store bought rotisserie chicken (or a homemade whole roast chicken)
- 1 cup full-fat Greek yogurt
- 170g basil pesto (homemade or store-bought)
- 1 heaping cup frozen peas, thawed
- 1 1/2 cups roughly chopped sugar snap peas
Instructions:
- Remove all the chicken meat and put it in a big bowl. Even though it may seem ruthless, just go with it. Use two forks to tear the meat into small pieces. Cut any big pieces of skin into smaller ones, then put them back in the bowl.
- Mix in the yogurt and pesto; add salt and pepper to taste. Mix well to ensure everything is evenly coated. After that, gently stir in the two types of peas.
