Turkey tonnato salad

Delight in the exquisite flavors of Turkey Tonnato Salad, a harmonious blend of succulent turkey and creamy tonnato sauce over a bed of fresh greens.

Ingredients:

  • 3 1/2-ounce can tuna packed in olive oil
  • 4 anchovies
  • 1 tablespoon drained capers
  • 1/4 cup each of lemon juice and mayonnaise
  • Salt and crushed red pepper flakes
  • 2 to 3 cups cubed, cooked roasted turkey
  • 1/4 cup parsley, chopped

Instructions:

  1. Combine tuna, anchovies, capers, lemon juice, and mayonnaise in a food processor and blend until smooth. Add salt and red pepper to taste. Mix the dressing with turkey and parsley. Arrange on a bed of lettuce with tomato wedges. Sprinkle with additional capers for garnish.
