Turkey taco salad
Delicious Turkey Taco Salad recipe bursting with flavors of seasoned ground turkey, crisp lettuce, juicy tomatoes, creamy avocado, & zesty salsa. Perfect for a quick and satisfying meal.
Ingredients:
- 1 cup salsa, store bought or homemade (page 220), divided
- 450g extra-lean ground turkey (see notes)
- 6 to 8 cup romaine lettuce
- 1 cup shredded cheese
- 2 cup tortilla chips

- Instead of ground turkey, you can use salsa slow cooker chicken as a topping: Place 1 pound of chicken breast in a slow cooker, cover it with 1/2 cup of salsa and a pinch of salt. Cook on low for 8 hours or on high for 4 hours, then shred. This salad can be served with either warm or cold cooked ground turkey. If preparing in advance, cook the ground turkey and salsa, and store in a sealed container in the refrigerator. You can customize this salad with various add-ins like sour cream or olives.
- 1. In a large skillet, combine 1/2 cup of salsa and ground turkey. Cook over high heat for 15 minutes, breaking up the turkey as it cooks until done.
- 2. Add lettuce to a large bowl or divide among four small bowls.
- 3. Once the turkey is cooked, spoon it over the lettuce, pour the remaining 1/2 cup of salsa over the turkey, and then sprinkle with cheese and crushed tortilla chips.
- 4. Toss the salad to combine and savor the flavors.
