Turkey, strawberry & avocado salad
Delicious Turkey Strawberry Avocado Salad recipe that blends savory turkey with sweet strawberries and creamy avocado for a flavor explosion.
Ingredients:
- 400g turkey breast mini fillets
- 2 lemons, 1 zested and juiced, 1 sliced
- 3 garlic cloves, crushed
- 1 tbsp maple syrup
- 2 tsp olive oil
- ½ tsp poppy seeds
- 160g baby spinach
- 1 avocado, peeled, stoned and sliced
- 200g strawberries, hulled and cut into quarters
- 10g basil, torn
Instructions:
- Place the turkey fillets between two pieces of parchment paper and flatten them to a thickness of 1cm with a rolling pin. Put the turkey, lemon slices, garlic, and 1 teaspoon of salt in a large pot. Add enough water to cover the turkey, then bring it to a boil over medium heat. Reduce the heat to low-medium, cover the pot, and simmer for 10 minutes, or until the turkey is fully cooked and the juices run clear. Remove the turkey from the pot with a slotted spoon, cover it loosely with foil, and allow it to cool slightly.
- Mix the lemon peel and juice with the maple syrup. Gradually whisk in the oil, and then stir in the poppy seeds. Season with salt and pepper.
- Pull apart the turkey using two forks. Place the spinach, avocado, strawberries, and basil on plates and top them with the shredded turkey. Drizzle with the dressing according to your preference, and then serve.
