Turkey meatball soup
Delicious turkey meatball soup recipe with savory broth, tender meatballs, and fresh herbs. A flavorful and comforting dish perfect for any occasion.
Ingredients:
- 4 tablespoons extra-virgin olive oil, divided
- 1 ⅓ cups chopped yellow onion
- ⅔ cup chopped carrot
- ⅔ cup chopped celery
- 2 tablespoons minced garlic
- 6 cups unsalted chicken broth
- 170g orzo, preferably whole-wheat
- 1 ½ tablespoons chopped fresh oregano
- ½ teaspoon kosher salt
- 24 cooked chicken meatballs (340g), such as Easy Chicken Meatballs (see associated recipe)
- 4 cups baby spinach
- ¼ cup grated Parmesan cheese
Instructions:
- Heat 1 tablespoon of oil in a large pot or Dutch oven on medium-high heat. Put in onion, carrot, celery, and garlic; sauté until the onion becomes translucent, which should take around 4 to 5 minutes.
- Pour in the broth, cover the pot, and wait for it to boil. Add orzo, oregano, and salt; cover and cook until the orzo reaches desired tenderness, approximately 9 minutes, while stirring occasionally.
- Incorporate the meatballs and spinach into the mixture; cook until the meatballs are heated through and the spinach wilts, generally 2 to 4 minutes.
- Present by sprinkling with cheese and drizzling with the remaining 3 tablespoons of oil.
