Turkey chopped salad with spicy avocado dressing

Ingredients:

  • large avocado, halved, pitted
  • 1/2 tablespoons fresh lime juice
  • 1/2 teaspoons chili-garlic sauce
  • tablespoons olive oil
  • cups diced cooked maple-honey turkey (about 280g)
  • cup diced peeled jicama
  • cup diced red onion
  • large red bell pepper, diced
  • /2 cup plus 1 tablespoon chopped fresh cilantro
  • Romaine lettuce leaves

Instructions:

  1. Place avocado flesh in a small food processor. Combine lime juice, chili-garlic sauce, and olive oil and blend until creamy. Season the dressing with salt and pepper to taste.
  2. Combine turkey, jicama, red onion, bell pepper, and 1/2 cup cilantro in a big bowl. Pour the avocado dressing over the mixture and mix well. Season with salt and pepper. Arrange lettuce leaves on plates. Put the salad in the middle and garnish with 1 tablespoon of cilantro.
