Tuna, chickpea and cherry tomato salad

Ingredients:

  • 6 oz. tuna in olive oil
  • 15 oz can chickpeas drained and rinsed
  • 1 1/2 cups cherry tomatoes, halved
  • 6 oz feta cheese, crumbled
  • 1/2 cup green olives, pitted and roughly chopped
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 3 tbsp fresh lemon juice
  • 1 cup pita chips, broken into 1-in. pieces
  • 1/4 cup chopped fresh parsley, optional
  • 5 oz baby arugula

Instructions:

  1. Strain the oil from the tuna and break the tuna into small pieces. Put it in a large bowl along with chickpeas, tomatoes, cheese, olives, salt, and pepper. Mix everything carefully.
  2. Separate the oil that was saved from the tuna using a strainer into a medium-sized bowl. Beat in lemon juice until it turns a bright yellow color and becomes a mixture, which takes around 1 minute. Drizzle this over the tuna mixture and mix well. Carefully add pita chips and parsley if desired. Serve on a bed of arugula.
