Tuna and white bean salad with heirloom tomatoes

Delight in the freshness of tuna and white beans paired with vibrant heirloom tomatoes in this satisfying and flavorful salad.

Ingredients:

  • 2 5-oz cans of tuna (preferably in olive oil)
  • 1 15-oz can cannellini beans
  • 1 garlic clove; minced
  • 1 cup heirloom cherry tomatoes (or any cherry tomato)
  • 6 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 tablespoon lemon juice (optional)
  • salt and pepper

Instructions:

  1. Empty the 15-ounce can of cannellini beans and rinse them under water.
  2. Cook the finely chopped garlic with 1 tablespoon of olive oil. Stir in the cannellini beans until they are coated with the oil.
  3. Transfer the warmed beans to a large bowl. Combine them with the two cans of drained tuna in the same bowl.
  4. Cut the heirloom cherry tomatoes in half and add them to the large mixing bowl.
  5. Mix the remaining 5 tablespoons of olive oil, red wine vinegar, Dijon mustard, and lemon juice (if desired) in a separate small bowl.
  6. Drizzle the prepared vinaigrette over the tuna, beans, and tomatoes. Season with salt and generously sprinkle fresh ground pepper. Gently mix all the ingredients together.
  7. Enjoy the dish warm or cold with a slice of crusty bread.
