Tuna and white bean salad with heirloom tomatoes
Delight in the freshness of tuna and white beans paired with vibrant heirloom tomatoes in this satisfying and flavorful salad.
Ingredients:
- 2 5-oz cans of tuna (preferably in olive oil)
- 1 15-oz can cannellini beans
- 1 garlic clove; minced
- 1 cup heirloom cherry tomatoes (or any cherry tomato)
- 6 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1/2 tablespoon lemon juice (optional)
- salt and pepper
Instructions:
- Empty the 15-ounce can of cannellini beans and rinse them under water.
- Cook the finely chopped garlic with 1 tablespoon of olive oil. Stir in the cannellini beans until they are coated with the oil.
- Transfer the warmed beans to a large bowl. Combine them with the two cans of drained tuna in the same bowl.
- Cut the heirloom cherry tomatoes in half and add them to the large mixing bowl.
- Mix the remaining 5 tablespoons of olive oil, red wine vinegar, Dijon mustard, and lemon juice (if desired) in a separate small bowl.
- Drizzle the prepared vinaigrette over the tuna, beans, and tomatoes. Season with salt and generously sprinkle fresh ground pepper. Gently mix all the ingredients together.
- Enjoy the dish warm or cold with a slice of crusty bread.
