Tropical lentil summer salad

Ingredients:
- 3 cups water
- 1/2 cup lentils
- 1 cup fresh pineapple, diced
- 1/2 cup cilantro, chopped
- 1/2 cup tomatoes, chopped
- 2 tablespoons balsamic vinegar
- 1/4 cup fresh lime juice
- 1 teaspoon grated ginger
- 2 tablespoons peanut oil
- 1/2 teaspoon lime zest
- 1 clove garlic, minced
- 1/4 teaspoon salt
Instructions:
- Boil water and put in lentils, then simmer gently until lentils are tender, around 20 minutes. Drain and move to a bowl for serving.
- In that bowl, toss in pineapple, cilantro, red onion, and tomatoes.
- Mix the rest of the elements in a tiny bowl and mix properly, drizzle dressing over the contents in the serving bowl and stir well.
- Chill in the fridge for a minimum of 1 hour before serving.
