Tropical lentil summer salad

Ingredients:

  • 3 cups water
  • 1/2 cup lentils
  • 1 cup fresh pineapple, diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup tomatoes, chopped
  • 2 tablespoons balsamic vinegar
  • 1/4 cup fresh lime juice
  • 1 teaspoon grated ginger
  • 2 tablespoons peanut oil
  • 1/2 teaspoon lime zest
  • 1 clove garlic, minced
  • 1/4 teaspoon salt

Instructions:

  1. Boil water and put in lentils, then simmer gently until lentils are tender, around 20 minutes. Drain and move to a bowl for serving.
  2. In that bowl, toss in pineapple, cilantro, red onion, and tomatoes.
  3. Mix the rest of the elements in a tiny bowl and mix properly, drizzle dressing over the contents in the serving bowl and stir well.
  4. Chill in the fridge for a minimum of 1 hour before serving.
