Ingredients:
- 4 medium-size Yukon gold potatoes, unpeeled and cut into 2-inch pieces
- 2 teaspoons peanut oil
- 1/2 Vidalia or red onion, cut in 1/2 and thinly sliced into half-moons
- 1 (8-ounce) can tropical fruit salad in passion fruit nectar
- 1 tablespoon brown sugar
- 1 tablespoon reduced-sodium soy sauce
- 1/2 teaspoon freshly ground black pepper
- 450g thick-cut deli ham
Instructions:
- In a large saucepan, put the potatoes and pour enough water to cover them. Place the saucepan over high heat, allow it to boil, and cook until the potatoes are soft when pierced with a fork, approximately 8 minutes. Remove from heat and drain the water from the pan.
- Meanwhile, in a large skillet, warm the oil over medium heat. Include the onion and sauté until it becomes tender, typically around 3 minutes. Introduce the canned fruit along with its juice, brown sugar, soy sauce, and pepper. Let it come to a gentle boil and continue cooking until the liquid starts to thicken slightly, approximately 5 minutes. Add the ham slices and potatoes, and let it simmer for an additional 2 minutes to warm through. It is now ready to be served.
