Triple xxx family restaurant potato salad

Ingredients:
- 4 medium Idaho potatoes
- 3 eggs
- 1 teaspoon yellow mustard
- 1 teaspoon sweet relish
- 1/4 cup chopped onion, such as white or Vidalia
- Salt and freshly ground black pepper
Instructions:
- Fill a large pot with cold water. Add potatoes and bring to a boil over high heat. Check the doneness of the potatoes after 15 minutes by inserting a thin-bladed knife. If it goes in easily, the center is tender. Drain the potatoes and run them under cold water to cool them down.
- Peel the potatoes and cut them into evenly sized bite-sized pieces. Set them aside.
- Place the eggs in a large pot and add enough cold water to cover the eggs by 1 inch.
- Bring the water to a boil, then cover and let the eggs cook for 10 minutes. Remove the pot from the heat and allow the eggs to cool with the lid on. Once cooled, peel the eggs and place them in an egg slicer. Cut through the eggs once, rotate them 90 degrees, and slice again (alternatively, thinly slice the eggs with a knife). Set them aside.
- In a large stainless steel or glass bowl, combine mayonnaise, mustard, relish, and chopped onion. Mix until thoroughly combined.
- Gently fold the potatoes into the mayonnaise mixture, being careful not to break them. Add the sliced eggs to the bowl. Mix everything together. Season with salt and pepper to your liking. Refrigerate overnight to enhance the flavors.
