Triple berry quinoa and spring green salad

Indulge in a burst of flavors with this delightful triple berry quinoa salad featuring fresh spring greens. Bright, tangy, and nourishing.

Ingredients:

  • 140g bag spring greens mix
  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • 3/4 cup strawberries, sliced
  • 1/4 cup thinly sliced red onion
  • 1 1/2 cups cooked quinoa (about 1/2 cup of dry quinoa, cooked)
  • goat chese, for topping
  • 1/4 cup champagne vinegar (white wine vinegar would work too)
  • 1 shallot, finely diced
  • 1 clove garlic, minced
  • juice of 1/2 a lemon
  • 1 tsp Dijon mustard
  • 2 tbsp honey
  • 1/2 cup olive oil

Instructions:

  1. Place all the ingredients in a food processor or blender and mix them together by pulsing.
  2. Mix all the salad components in a big bowl, then pour around half of the dressing on top.
  3. Stir everything together, then add more dressing based on your preference for dressing.
  4. Sprinkle crumbled goat cheese on top and present the dish.
