Triple berry quinoa and spring green salad

Enjoy the vibrant mix of triple berries and fresh spring greens in this delectable quinoa salad. Bursting with flavors and nutrients, it's a nutritious choice for a refreshing meal.

Ingredients:

  • 140g bag spring greens mix
  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • 3/4 cup strawberries, sliced
  • 1/4 cup thinly sliced red onion
  • 1 1/2 cups cooked quinoa (about 1/2 cup of dry quinoa, cooked)
  • goat chese, for topping
  • 1/4 cup champagne vinegar (white wine vinegar would work too)
  • 1 shallot, finely diced
  • 1 clove garlic, minced
  • juice of 1/2 a lemon
  • 1 tsp Dijon mustard
  • 2 tbsp honey
  • 1/2 cup olive oil

Instructions:

  1. Place all the components into a food processor or blender and blend until mixed.
  2. Put all the salad elements in a big bowl, then pour roughly half of the dressing over them.
  3. Mix well, then add additional dressing depending on your preference for how much dressing you like on your salad.
  4. Sprinkle crumbled goat cheese on top and serve the dish.
