Triple berry quinoa and spring green salad
Enjoy the vibrant mix of triple berries and fresh spring greens in this delectable quinoa salad. Bursting with flavors and nutrients, it's a nutritious choice for a refreshing meal.
Ingredients:
- 140g bag spring greens mix
- 1/2 cup raspberries
- 1/2 cup blueberries
- 3/4 cup strawberries, sliced
- 1/4 cup thinly sliced red onion
- 1 1/2 cups cooked quinoa (about 1/2 cup of dry quinoa, cooked)
- goat chese, for topping
- 1/4 cup champagne vinegar (white wine vinegar would work too)
- 1 shallot, finely diced
- 1 clove garlic, minced
- juice of 1/2 a lemon
- 1 tsp Dijon mustard
- 2 tbsp honey
- 1/2 cup olive oil
Instructions:
- Place all the components into a food processor or blender and blend until mixed.
- Put all the salad elements in a big bowl, then pour roughly half of the dressing over them.
- Mix well, then add additional dressing depending on your preference for how much dressing you like on your salad.
- Sprinkle crumbled goat cheese on top and serve the dish.
