Traditional mexican christmas salad
Delight in the flavors of a traditional Mexican Christmas salad bursting with vibrant colors and fresh ingredients, a festive culinary celebration.
Ingredients:
- 6 Granny Smith apples
- 2 cups diced pineapple
- 1/2 cup diced celery
- 1/3 cup raisins
- 1/3 cup sweetened shredded coconut
- 1/2 cup walnuts, roughly chopped
- 1/4 cup mayonnaise
- 1 tablespoon sour cream
- Salt and freshly ground black pepper
Instructions:
- Cut off the top quarter of each apple and keep it aside. Use a melon baller to remove the inside of the apple to create a hollow space (where the prepared salad will go). Roughly chop the apple pieces and combine them with the rest of the ingredients in a large bowl. Add salt and pepper to your liking.
- Fill each apple hollow with about 3 tablespoons of the mixture and cover with the set aside apple tops (any unused mixture can be stored in the fridge for up to 1 day). Serve chilled or at room temperature.
- Cook's Tip: To keep the apples from browning as you prepare the filling, soak them in a bowl of water with the juice of 2 limes.
