Touchdown turkey salad

Ingredients:
- 3/4 cup uncooked rice
- 1-1/2 cups salted chicken broth
- 2 cups cooked turkey breast strips
- 1-1/2 cups diced unpeeled apple
- 1 cup sliced celery
- 1/4 cup chopped walnuts, toasted
- 1/3 cup bottled poppy seed salad dressing
- Lettuce leaves
Instructions:
- Place rice in chicken broth over high heat and bring to a boil. Then, lower the heat, cover the pan tightly, and let it simmer for 15 minutes without lifting the lid. Take the pan off the heat and allow it to sit, still covered, for 5 minutes. Let it cool to room temperature or refrigerate. When you are ready to serve or transport the salad, mix the cooked rice with turkey slices, apple, celery, and walnuts in a medium bowl (you can lightly brown the nuts in a small, dry skillet over medium heat until they become aromatic). Gently mix in the salad dressing using a fork and spoon the salad into lettuce cups.
