Tossed salad

Ingredients:

  • 30g red wine vinegar
  • 1 teaspoon sugar 
  • 1 tablespoon finely diced red onion
  • 1 cup mixed greens
  • 4 cherry tomatoes, halved
  • 2 tablespoons crumbled feta cheese 
  • 1 tablespoon thinly sliced green onions 
  • 1/60g balsamic vinegar
  • 1/2 teaspoon Dijon mustard 
  • 1/60g olive oil 
  • Kosher salt and freshly ground black pepper

Instructions:

  1. To prepare the pickled onions: Heat the vinegar in a small saucepan until it boils. Stir in the sugar and then drizzle the mixture over the red onions. Allow it to cool, then place it in the refrigerator overnight. The following day, strain the pickled onions before using them.
  2. To assemble the salad: Mix the greens, tomatoes, feta, green onions, and pickled onions in a bowl.
  3. For the vinaigrette: Combine the vinegar, mustard, oil, salt, and pepper in a bowl and whisk until well mixed.
  4. Pour the vinaigrette over the salad, mix well, and then serve on a plate.
