Tonno salad

Ingredients:

  • 280g Bumble Bee Tonno in Olive Oil (2 cans)
  • 140g Baby arugula
  • 1 cup Cherry tomatoes, halved
  • 2 Stalks celery, sliced
  • 1 cup garbanzo beans, rinsed
  • 1/4 cup Red onion, diced
  • 1 teaspoon cracked black pepper
  • 1/4 cup Extra virgin olive oil
  • 2 teaspoons dijon mustard
  • 1 lemon, juiced

Instructions:

  1. Divide the arugula evenly onto four plates.
  2. Place on each plate a quarter portion of tomatoes, chickpeas, celery, and tuna on top of the arugula.
  3. Sprinkle with pepper.
  4. Mix olive oil, lemon juice, and dijon mustard in a small bowl, whisking until well combined.
  5. Pour the dressing over each plate.
