Tonno salad

Ingredients:
- 280g Bumble Bee Tonno in Olive Oil (2 cans)
- 140g Baby arugula
- 1 cup Cherry tomatoes, halved
- 2 Stalks celery, sliced
- 1 cup garbanzo beans, rinsed
- 1/4 cup Red onion, diced
- 1 teaspoon cracked black pepper
- 1/4 cup Extra virgin olive oil
- 2 teaspoons dijon mustard
- 1 lemon, juiced
Instructions:
- Divide the arugula evenly onto four plates.
- Place on each plate a quarter portion of tomatoes, chickpeas, celery, and tuna on top of the arugula.
- Sprinkle with pepper.
- Mix olive oil, lemon juice, and dijon mustard in a small bowl, whisking until well combined.
- Pour the dressing over each plate.
