Tomatoes, goats cheese and herb salad

Discover a delectable blend of juicy tomatoes, creamy goat's cheese, and fresh herbs in this vibrant salad bursting with flavor. Taste the goodness!

Ingredients:

  • 6-8 Large ripe tomatoes (Yellow, Orange and Green are all in season so experiment and mix it up a bit)– Slice into quarters
  • generous pinches Salt and white and freshly ground black pepper
  • 2 Cloves of garlic – Crushed and finely chopped
  • 100 grams Capers (add a glug of the vinegar from the jar too)
  • 1 handful Parsley- Finely sliced
  • 1 handful Basil leaves – Roughly torn
  • 250-300 grams Goats cheese (vegetarian) – Roughly broken up
  • big splashes White wine vinegar
  • generous Gglug of extra virgin olive oil

Instructions:

  1. Cut the ripe tomatoes into slices and arrange them in a spacious serving dish or platter. Season them.
  2. Combine the minced garlic, capers, caper vinegar, parsley, and basil, then sprinkle the crumbled goat cheese on top. Pour a generous amount of white wine vinegar and mix gently to blend all the flavors. Finish by drizzling extra virgin olive oil and a touch of additional seasoning over the mixture.
  3. Serve immediately and use a chunk of sourdough to soak up any remaining oil and vinegar. Ensure none of this dish is left uneaten.
