Tomato, tuna & tarragon salad

Ingredients:

  • 1 (140g) can chunk light tuna in water, drained
  • 2 tablespoons mayonnaise
  • 4 teaspoons sweet pickle relish
  • 2 tablespoons finely chopped celery
  • 4 slices whole-wheat sandwich bread
  • 2 leaves green-leaf lettuce

Instructions:

  1. Mix together tuna, mayonnaise, relish, and celery in a medium bowl. Spread the tuna salad on 2 pieces of bread. Place a lettuce leaf on top of each, then add another slice of bread. Cut the sandwiches into halves or quarters.
