Tomato salad with pine nuts and pomegranate molasses
Delight in the perfect harmony of ripe tomatoes, crunchy pine nuts, and tangy pomegranate molasses in this refreshing salad bursting with flavor.
Ingredients:
- 1/3 cup chopped golden raisins
- 1/4 cup apple cider vinegar
- 1/3 cup pine nuts
- 1 lb. small tomatoes (such as Sun Gold, cherry, and/or grape), some halved, some left whole
- 1/2 small red onion, very thinly sliced
- 1/4 cup extra-virgin olive oil
- 1 cup basil leaves, torn if large
- 2 Tbsp. pomegranate molasses
- Kosher salt
Instructions:
- Heat oven to 350°F. Mix raisins and vinegar in a big bowl; allow it to rest until raisins become soft, for about 15–20 minutes.
- While waiting, roast pine nuts on a baking sheet with edges, stirring halfway through, until they turn golden brown, for about 5–7 minutes. Allow them to cool.
- Combine pine nuts, tomatoes, red onion, and oil to the bowl with raisins; season with salt and gently mix together. Add basil and mix lightly once more.
- Move the salad to a serving dish and pour pomegranate molasses over the top.
