Tomato salad with blue cheese and crispy shallots

Ingredients:

  • ⅓ cup extra-virgin olive oil
  • 3 Tbsp. sherry vinegar or red wine vinegar
  • 1 tsp. Dijon mustard
  • 1 tsp. honey
  • Kosher salt, freshly ground pepper
  • 8 cups Bibb lettuce leaves
  • 12 oz. mixed tomatoes, halved, quartered if large
  • 3 oz. blue cheese, crumbled
  • ½ cup store-bought fried shallots or onions

Instructions:

  1. Combine oil, vinegar, mustard, and honey in a small bowl and mix until well combined. Add salt and pepper to taste to the vinaigrette.
  2. Place lettuce and tomatoes in shallow bowls or on plates, then pour the vinaigrette over them; sprinkle with salt. Finish off with blue cheese and crispy shallots on top.
  3. Prepare the vinaigrette in advance: It can be prepared up to 1 week earlier. Keep it covered and refrigerated. Allow it to come to room temperature and mix well before serving.
