Tomato salad ‘maman blanc’

Try the fresh and flavorful Tomato Salad 'Maman Blanc' recipe for a burst of culinary delight in every bite. Perfect for summer cookouts and picnics.

Ingredients:

  • 800g tomatoes (Coeur de Boeuf or Marmande), destemmed and cored (see tip, below left)
  • 1 banana shallot or small red onion, peeled and finely sliced
  • ½ garlic clove, crushed
  • 1 tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • 4 tbsp extra virgin olive oil
  • 6 basil or flat-leaf parsley sprigs, leaves picked and torn or roughly chopped

Instructions:

  1. Slice the tomatoes horizontally into 5mm thick pieces. Place them neatly in a shallow serving dish shaped like an oval, sprinkle the shallots on top, and add 4 pinches of sea salt for seasoning. Let it sit.
  2. For the vinaigrette, combine the garlic, wine vinegar, Dijon mustard, and 1 tbsp of warm water in a bowl. Slowly drizzle in the oil while whisking continuously. Incorporate another 1 tbsp of warm water to create a smooth dressing. Season with salt and pepper. Pour the dressing over the tomatoes and allow it to soak for approximately 1 hour at room temperature. Garnish with herbs before serving.
