Tomato, pickled melon, and burrata salad

Indulge in a flavorful blend of juicy tomatoes, tangy pickled melon, and creamy burrata cheese with this vibrant and refreshing salad. Perfect for a light and satisfying dish bursting with fresh summer flavors.

Ingredients:

  • 2 tablespoons white wine vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper, plus more
  • 450g Sharlyn or Galia melon, rind removed, sliced into thin rounds
  • 1 large heirloom tomato, sliced
  • 340g fresh burrata or mozzarella, torn
  • Olive oil (for drizzling)
  • Fresh basil leaves (for serving)
  • Flaky sea salt (such as Maldon)

Instructions:

  1. Mix vinegar, kosher salt, 1/4 teaspoon of pepper, and 2 tablespoons of water in a spacious bowl; put in melon and mix gently. Allow it to sit at room temperature for a minimum of 30 minutes.
  2. Take out the melon from the pickling mixture and place it on a dish with tomato and burrata. Pour oil and a bit of the pickling mixture on top, add basil, and sprinkle with sea salt and pepper.
  3. Preparation tip: You can pickle the melon in advance for up to 2 hours. Just cover and refrigerate.
