Tomato, pickled melon, and burrata salad

Ingredients:
- 2 tablespoons white wine vinegar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper, plus more
- 450g Sharlyn or Galia melon, rind removed, sliced into thin rounds
- 1 large heirloom tomato, sliced
- 340g fresh burrata or mozzarella, torn
- Olive oil (for drizzling)
- Fresh basil leaves (for serving)
- Flaky sea salt (such as Maldon)
Instructions:
- Mix vinegar, kosher salt, 1/4 teaspoon of pepper, and 2 tablespoons of water in a spacious bowl; put in melon and mix gently. Allow it to sit at room temperature for a minimum of 30 minutes.
- Take out the melon from the pickling mixture and place it on a dish with tomato and burrata. Pour oil and a bit of the pickling mixture on top, add basil, and sprinkle with sea salt and pepper.
- Preparation tip: You can pickle the melon in advance for up to 2 hours. Just cover and refrigerate.
