Tomato, nectarine & mozzarella salad

Enjoy the refreshing blend of ripe tomatoes, juicy nectarines, and creamy mozzarella in this vibrant salad bursting with flavors and textures.

Ingredients:

  • 3-4 tomatoes
  • 2-3 nectarines
  • 1 ball fresh mozzarella
  • 3/4 cup fresh basil leaves
  • extra virgin olive oil (enough to drizzle over the salad)
  • salt and pepper
  • 2 - 3 tablespoons balsamic vinegar reduced to a syrup (I add a bit of honey before I reduce it)

Instructions:

  1. Cut the tomatoes, nectarines, and mozzarella into similar-sized wedges and place them on a serving dish with the basil leaves. Pour the olive oil on top and season with salt and pepper. Pour the balsamic reduction around the edges and over the dish.
