Tomato & fennel salad

Delight in the vibrant flavors of juicy tomatoes and aromatic fennel in this refreshing salad. A perfect blend of freshness and crunch.

Ingredients:

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon champagne vinegar, or white-wine vinegar
  • ½ teaspoon salt
  • Freshly ground pepper, to taste
  • 450g tomatoes, cut into wedges
  • 2 cups thinly sliced fennel bulb
  • ¼ cup chopped fresh parsley
  • 1/3 cup toasted pine nuts, (see Tip)

Instructions:

  1. Combine oil, vinegar, salt, and pepper in a spacious bowl by whisking. Put in tomatoes, fennel, parsley, and pine nuts; mix well.
