Tomato, cucumber, and fresh herb salad

Ingredients:
- 3-4 small Persian cucumbers
- 2 heirloom tomatoes (preferably different colors)
- 1 pint mixed color cherry tomatoes
- 1 ball fresh mozzarella
- 1 handful basil leaves
- 1 handful flat-leaf parsley leaves
- 1 handful mint
- Salt, pepper, and MSG, to taste
- 1 shallot
- 1/2 cup olive oil
- 1/4 cup sherry vinegar
- 1 teaspoon lemon juice
- 1/2 teaspoon honey
- 1 handful basil, parsley, and mint, roughly chopped
- 1 dash salt and pepper, to taste
Instructions:
- Prepare the dressing: Combine olive oil, sherry vinegar, lemon juice, shallot, and herbs in a small bowl. Mix thoroughly until the ingredients are well blended. Season with flaky salt and freshly ground pepper according to your preference.
- Prepare the salad: Cut the cucumbers into circular pieces. Cut the heirloom tomatoes into wedges. Halve the cherry tomatoes. Cut or pull apart the mozzarella into small, bite-sized chunks.
- Mix all salad components in a bowl or serving dish. Pour the dressing over the salad and mix well. Garnish with additional herbs and adjust the seasoning with salt and pepper as desired.
